Sotol La Higuera is the first brand to explore the unique varieties of Dasylirion, offering a rich tapestry of flavors and experiences from distinct regions of Chihuahua. Each sotol plant, ready for harvest at around 20 years old, is wild and naturally resilient, contributing to the rich biodiversity of its environment. By leaving a portion of the piña with the roots, these plants can regrow, ensuring a sustainable approach to sotol production.
From the cold, grassy hills of El Sauz to the dry deserts of Coyoame, and the humid, green Sierra del Diablo, each sotol variety brings its unique character to the glass. Maestro Mezcalero Gerardo Ruelas expertly crafts each expression, capturing the essence of the land and the traditional methods passed down through generations.
Sotol La Higuera Leiophyllum offers earthy notes of wet soil and ash with a meaty palate and fruity finish. Sotol La Higuera Wheeleri balances smoke, herbs, and fruit with a harmonious blend of herbal and pineapple notes.
